Gillanoss is the only bounty hunt I couldn't find nor defeat. Any tips where to find and beat it?

One of the two endings show a happy ending. I personally think that both endings is consider as the game's true ending since after you beat the final boss, it'll unlock some bonus dungeons and subquest to finish and play. Correct me if I'm wrong
