Alchemist requires Sacred Incense but I forgot where it came from.  It gives +15% DEF

Edit:  Final Monk piece is the White Lotus (+3% HP) which comes from Ohana Beach (to the east of Ohana Village.  There is a yellow flower on the southern part of screen on the beach which has it.

I found it finally, it's on the table in the Dragon's Palace (place with mermaids underwater) in the kitchen.
