Atk is influenced by Weapons. Mostly Upgraded through Better weapons.
Str influences ATK as well. Like Half of a Characters STR is added to ATK. Can be upgraded with Seeds and Leveling up.
Also I forgot what Hitman Arkstone does. But Also Im pretty sure I don't use it as well.
Also If you the 1 hit you are talking about is On Metal Monsters, then actually Metal Monsters in the game can only be damaged 1 if nothing else is equipped( Like 30 or 100 Arkstone ) or Dealing Critical Damage instantly one shots them.
Also the Crit doing 1 damage...... Well that never happened to me. Try removing hitman arkstone.
Experience , Gold , And Best Place to farm weapon
The hitman arkstone does well(Still dunno What it does), the problem is that weapon.The one-normal-atk-damage is working on all monster. But the payback is the crit rate is very high. Just don't use the normal atk(this make confusion no better Than paralysis).I get that weapon from chest, just give it a shot

i try the 30 arsktone and quintuple and they seems not synergy.
with no quintuple the damage is single 30. with quintuple the dmage is 6 x 5 attack resulting 2 or 3 attack are miss.
i try use pompom doll on noelle with all arkstone and 30 arkstone, the shortcut battle is sometimes triggered(thanks god)

High level, weapons that have critical pretty high, Acceleration Ring and All Arkstone equipped. And changed level difficulty to Easy.
EDIT: The Hitman Arkstone is good only against Gazillion Challenge. Otherwise is worthless. The 20 Arkstone is generally worthless.

You also might want to go for a better weapons. It might took You a while, but for example You might go to the Fairy Land in Susha (where one of the signposts is) and try farming weapons there. Fairies have attack +500 weapons. Use three Acceleration Rings, some break rings (on Noelle), and go for a hunt. Make sure Noelle has a weapon with Break equipped. She will act first, if she will trigger her Give me a present skill, then run away from battle. If not, then let the fairies kill You and retry battle. After a few times with no drops leave that battle and try another..

I have found an island with gold monster and their drop items are lodestones(s/m/l). Also they give a lot of gold.
Then after 30 mins farming i reach 99999999 gold And go to forgotten Village to buy 100 arkstone until i realize they dun have 100 arkstone in the coins exchange*tears well up*.
So i get some parameter rings and romance rod. Combined with first ring and crit weapon i finally can handle the metal monster in asdivine, but Then i disappointed when they only give moderate exp and few gold. Now i stuck on lv 300.
I try the other island but the chaos dragon k.o. The party only in 2 turns
