Now that we've got that, I'd like to open up the discussion to, "which job class (or classes) do you recommend?"
I really like Sage and Chevalier. Sage has some really powerful magic skills, and Chevalier has some great physical skills (that attack ALL enemies!); the only problem is that both of these jobs don't become available until pretty late in the game.
Another (related) question: When you change Job classes for your followers, do you try to balance the jobs (i.e. one physical type, one magic type), or load up one character with a whole bunch of magic-only types (like Mage, Priest, Sage, etc.) Or does it matter?
Since you can only use the skills for the Job you currently have, the wiser approach might be to just look at the Auto Skills for each job, and then decide which of those you want your followers to gain?
I have to admit, I did not put a lot of thought into this part of the game... so if any one has any recommendations, I'm all ears!

I found towards the end of the game my followers classes didn't really matter too much as my leaders were hitting much, much harder than all of my followers combined. I generally prefer classes that can buff my leaders though, just to further boost their damage. That said, the auto skills they get from mastering their classes and the scrolls you get from that are very useful. I'm gonna cover a few classes I advise mastering and possibly using and a couple teams I advise.
Warrior and/or Mage: When combined with Dancer and Revenant's auto-skills you can stay at low health constantly without needing to heal and their auto-skills can thus provide easy damage buffs. That said, though you can get them early on I wouldn't say they are worth mastering til later on when you can get the Revenant class. Decent damage dealers early on though.
Bard and Dancer: Auto MP and HP regens! What's not to love? Both are also useful as support classes with team buffs and Dancer can pass as an attacker. You also get them early on, which is nice. Dancer + Revenant pretty much breaks the game too.
Hunter: Auto-skill gives +25% crit chance, the class can pass as an attacker, is the easiest class to master and makes mastering the other classes easier while at it? Oh, and you get it early on? What's not to love?
Sage: Auto-skill lowers magic costs by 25% in battle and the class itself packs a wide variety of spells. Not obtained as late as one might think for a class like this either.
Baker: Auto-skill doubles HP/MP restoration from skills and items. This is probably one of the last classes you will get in the game and it's auto-skill isn't really needed at that point. It is however the best support in the game as it has a move that not only fully heals the whole teams HP AND MP, but also removes all status ailments AND fully buffs everyone all for the low cost of inflicting idle on the Baker, which is mostly nullified by the Dancer + Revenant auto-skill combo. Pretty sweet class.
Revenant: It's auto-skill makes it so that if you have more than 1 HP when you would take a lethal hit you get reduced to 1 HP instead. This auto-skill is extremely broken when combined with Dancer's auto-skill as it makes you almost immortal. That combo makes all of the other defensive abilities in the game nearly pointless as it doesn't matter how hard you get hit, you will survive and heal next turn anyways. It also works well Warrior/Mage's auto-skill since you can remain low on health with no problem most of the time. The class itself though is a little lacking and you get this somewhat late in the game.
Villager: The auto-skill increases your leaders stats by 10%. Pretty useful and should be mastered ASAP on all of your followers so they can give your leaders a permanent +30%. Thankfully it's one of the first classes you can get. The class itself is pretty cruddy though.
Chevalier: Auto-skill gives you a crystal every time you kill an enemy. Nice if you want to farm crystals for stat fragments, but this is one of the last classes in the game, so it'll take while to actually get it. The class itself also has a nice variety of skills, but I've yet to find a team bonus with it.
Now for a couple of team combos. First is Bard, Dancer, and Baker, which lowers HP costs by 25% and provides a lot of different buffs for your team and leaders. Second is mostly the same as the previous but swaps Baker out for Villager to instead get a constant 20% HP/MP regen that stacks with Bard and Dancer's auto-skills and allows the leaders to spam their ultimate HP attacks every turn if they used a Dancer Scroll. Baker is better than Villager overall, but Villager gives an overall better team bonus, so it's up to you which to use.
