Basically I just want to know if I should be having so much trouble wiping them, it's nice to see 4 show up, but then they keep fleeing because my attacks all whiff besides the standard attack and crits, what gives?!
Do I need the crit ring on Lucas and use random slash? I would like to be able to wipe 2 blobs at level 40 :/

You only need Critical Ring and All hit Skill (any will suffice) to wipe out them easily. That's it. You'll never see them run away again.
Metal Monsters are vulnerable to Criticals in most games (like Dragon Quest series). But if you are really interested in grinding EP, definitely go and get the flying beast (to not spoil) which is available just before final boss. Goddess Shrine highest floors have a great Metal enemy rate and they give a lot of EP (if I remember correctly I could get 24 EP or so) from them.

@marco1718, depends on monster but if you grind for a bit at all floors you will find all Metal Monsters as they appear often. The Higher the floor, the better Metal Monsters you will find which give more EP. Metal Bulls should be available somewhere in the middle of the Goddess Shrine or close to the Top.
