How do I get the moves unlocked for a different job?

Example

Melvin is a brigand king and I want him to be a soldier. I get lots of soldier growth plates, paladins and knights but he cant use their moves.

Because you need to change job. Each job has some skills they and only they can use. You can change job from Menu (don't remember where)
