He is in the cave to the east. He will actually be visible (not just a random encounter).

First Jombie is in Mt Gozirus to the west of the starting town for me, to the left of the entrance.

2.encounter is in Dying Forest, first Screen top left Corner.
3.encounter is in City of Larum behind a House.

For anyone struggling to find Jombies final location it is a very small island at the northernmost point on the map you must reach by boat. He is extremely fast! I suggest using oil rounds to slow him down or you will mostly miss w your attacks.
